Viennese Chocolate
From The Charlotte Cookbook
Ingredients
- 4 ounces semi-sweet chocolate
- 1/3 cup sugar
- 1/3 teaspoon salt
- 1-1/3 cups boiling water
- 4 cups scalded whole milk
- 1 teaspoon vanilla
- ½ pint heavy cream, whipped
In the top of a double boiler, over hot water, melt the chocolate. Stir in sugar and salt. Slowly add boiling water, blend, then add scalded milk. Simmer the chocolate for a few minutes and beat with a wire whisk until frothy. Add the vanilla. Serve in a heated pitcher and pass the whipped cream separately. Makes 6 cups.
