Stir Fry Carrots

Prep time 15 minutes
Cook time 10 minutes
Serves 4-6
- 6-8 carrots, coarsely grated
- 1 onion, coarsely grated
- 1 clove garlic
- salt and pepper, to taste
- pinch sugar
- 1 tablespoons margarine
Coarsely grate carrots and onion. Stir fry in melted, sizzling margarine with garlic. Cook until tender in skillet, stirring with spatula as you would any stir fry dish. Add salt, pepper, and sugar. Stir once again and serve.
