Salty Dog Shrimp Salad
From A Taste of Hilton Head Island

- 2 pounds small to medium shrimp, peeled and deveined
- 1 cup diced pimentos
- 2 cups celery, finely chopped
- 2 cups mayonnaise
- 1 tablespoon Cajun shrimp seasoning
- dill weed
- old bay shrimp boil
Bring a large pot of water to boil and add old bay shrimp boil according to the instructions on the can. Boil shrimp for 2 to 3 minutes, or until done. Remove shrimp and let cool. Mix together pimentos, celery, mayonnaise, and Cajun shrimp seasoning. Add dill weed to your taste. Fold in cooled shrimp. Serve on a bed of lettuce or a split croissant. Serves 4.
