Glazed Canadian Bacon

Source: Ship to Shore I, p. 27

Prep time 5 minutes
Cook time 1 hour
Serves 8-10

  • 1 (3-5 pound) while Canadian bacon
  • ½ to 1 cup apple cider (Or other unsweetened fruit juice) beer or ginger ale
  • ½ cup maple syrup
  • 2 teaspoons dry mustard
  • whole cloves

Preheat oven to 325. Set bacon in baking pan and pour juice over. Bake 15 minutes per pound basting every 15 minutes with juices. Whisk maple syrup and mustard in small bowl. About 15 minutes before end of baking time, score outside of bacon diagonally to form diamonds. Stud decoratively with cloves. Brush with syrup mixture and continue baking until brown and well-glazed, basting once or twice. Transfer to heated platter. Slice thinly to serve.

Breakfast bacon fried in oven will not curl.
