Deviled Crab
From “Any Way You Measure – Creative Cookery”
- 1/3 cup butter
- 3 tablespoons chopped onion
- ¼ cup chopped green pepper
- ½ cup flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- dash of cayenne
- 1 teaspoon dry mustard
- 1-1/2 cups milk
- 1 tablespoon lemon juice
- 1 teaspoon Worcestershire sauce
- 12 ounce crabmeat, frozen or fresh
- 2/3 cup shredded American cheese
- corn flakes
Saute onion and pepper in butter until soft. Add all remaining ingredients except crabmeat and cheese to make a white sauce. Add crabmeat and cheese and heat until warm. Place in casserole. Sprinkle with a few crushed corn flakes. Bake at 350 for 30 minutes. Serve with crusty bread and green salad for a luncheon. Serves 6.
